KUKHURA ko RAS (CHICKEN COOKED in THIN LIQUID )

Ingredients:
250 gm,Bony pieces of Chicken(Wings,neck,ribs pieces)
1 Small onion chopped
1 Small tomatoes chopped
1 tea spoon Garlic paste,
1 tea spoon Ginger paste
2 Pieces red chillies broken in to half
1 tsp cumin seeds
1 teaspoon carom seeds,
2 pinches asafoetida
3 cups Water
Salt to taste.
Method:
1) Heat the oil in the deep sauce pan or pressure cooker.
2) Add cumin seeds, asafoetida, red chillies, carom seeds let it crackle for few seconds and add onions fry for 3 minutes.
3) Add chicken pieces fry for 2 minutes, add ginger paste ,garlic paste, salt ,chilli powder, turmeric powder, stirring occasionally let it cook for about 5 minutes .
4) Add tomatoes stir and cook for 2 minutes.
5) Add water cover and give two whistles. If cooking on deep sauce pan cook till the chicken pieces are cooked.
6) Serve with plain rice.
Kukhura ko Masu Ledo (CHICKEN with GRAVY)

Ingredients:
1 kg Chicken cut in to 2 inch Pieces
3 medium Onions thinly sliced
2 medium Tomatoes sliced
1 tea spoon Cumin powder
1 tea spoon Coriander powder
1 tea spoon Ginger paste
1 teaspoon Garlic paste
1 tea spoon Chilli powder
1 Bay leaf broken in to half
1 pinch Asafoetida
3 pcs. Clove
3 pcs broken Cardamoms
1 small stick Cinnamon
2 pcs. Red chillies broken in to half
½ tea spoon Turmeric powder
3 to 4 pcs. Black Pepper corns (Marich)
½ cup Mustard or refined Oil
2 table spoon chopped green coriander leaves
Salt to taste
Method:
1 ) Heat the Wok (karahi) and add oil.
2 ) Add bay leaf, cloves, asafoetida, cardamoms, cinnamon, red chillies, paper corns, let it crackle for about a minute.
3 ) Add onions; let it cook till onions are transparent.
4 ) Add chicken, fry for 5 minutes in medium heat.
5 ) Add cumin powder, coriander powder, ginger paste, garlic paste and let it cook for about 5 minutes stirring time to time.
6 ) Add salt and chilli powder and turmeric powder.
7 ) Add tomatoes; let it cook for 5 minutes.
8 ) Add ¼ cup water let it cook till it turns in to gravy and chicken pieces are cooked. Garnish with green coriander leaves.
9 ) Serve with Rice, Roti or Pulao (pilaf).
KUKHURA TAREKO (FRIED CHIECKN with MASALA)

Ingredients:
1 kg Chicken cut in to1 inch pieces (with bone or boneless)
3 medium Onion thinly sliced
1 table spoon Garam Masala powder (cinnamon, cardamom, clove, paper corns, dried bay leaf, asafoetida, cumin seeds powdered together).
1 tea spoon Red chilli powder
½ tea spoon Turmeric powder
1 tea spoon Cumin powder
1 tea spoon Coriander powder
1 cup Oil (if desired oil can be taken out when the chicken is cooked)
Coriander leaves to garnish
Salt to taste
Method:
1) Heat the oil in a wok (Karahi ).
2) Add onion and fry till transparent.
3) Add chicken fry for about 10 minutes on medium heat stirring occasionally.
4) Add salt, chilli powder, turmeric powder, Garam Masala powder, cumin powder and coriander powder.
5) Fry till the chicken is cooked and crisp.
6) Garnish with coriander leaves, serve hot with rice or Pulao.
